Brownie banana bread (vegan)



So yesterday I was scrolling through instagram, and for some reason, everybody seemed to be posting photos of banana bread/cake, and it got me craving! Banana bread has to be one of man's greatest inventions, and it's probably one of my favourite things! Cannot go wrong with a slice of nana bread, amirite! In the past I have attempted to make vegan banana bread, but for some unknown reason it's always failed, but today, for some unknown reason, it turned out super goooooood! So I had to share this recipe! And to make it that much better it has swirls of brownie in it!

Vegan Brownie Banana Bread
2 mashed bananas
1/3 cup oil
3/4 cup soy milk
1 tsp vanilla essence
1/3 cup sugar
2 cups flour
1 tsp baking powder
1 tsp baking soda
Brownie
1 cup flour
1/3 cup cocoa powder
1/3 cup sugar
1/4 cup oil
1/3 cup soy milk
1 tsp baking powder
Method
1) Whisk together the mashed bananas, vanilla, milk and oil till its all fully combined. Add the sugar and whisk so it's fully combined. Next add the flour, baking powder + soda and fold it all together.
2) Place some baking paper into a loaf tin, and pour this mixture into it. Set aside.
3) To make the brownie, mix together all the ingredients, if it is very thick add a few splashes of water or more soy milk.
4) Pour the brownie mixture into the banana mixture, and taking a knife, swirl it around to mix the colours.
5) Bake in an oven heated to 160 degrees C, for 30-40 minutes- check with a skewer to make sure its completely cooked.  Remove and allow to cool before slicing!



There you have! A twist to traditional banana bread, so easy, quick and yummy!!
